Gluten-free Egg Banana Pancakes: Our Kickstarter Recipe for an Amazing 2022!

One of the most common new year resolutions out there is to try to be healthier and fitter each year, and we want to support you as you stick to this goal. We would like to keep sharing with you the healthiest recipes we could find or come up with so that you can take good care not only of your health but also of your family’s wellbeing.
Aside from being healthy, we’d like to continue sharing quick and easy-to-make recipes because we know how busy it can be in the kitchen. For our first Meal Monday this year we are sharing with you our gluten-free, egg banana pancakes. This is oh-so-yummy, healthy, easy, and so affordable to make. Perfect for breakfast. Let’s go!
You’ll need:
3 bananas, mashed
6 eggs
A teaspoon of baking soda
1-2 teaspoons of cinnamon powder
⅛ teaspoon of salt
1-1 ½ teaspoon of vanilla
Butter
Griddle pan or a regular pan
Optional (as topping):
Whipped cream
Nut butter
Nuts
Fruit of choice (strawberries, blueberries, apples, etc)
In a bowl, mash about 3 whole bananas. When this is done, crack up 6 eggs in another bowl and start beating so we’ll end up with scrambled eggs. The ratio for this recipe is about 1 banana to 2 eggs, so don’t hesitate to adjust how many bananas and eggs you’ll be using for this recipe. The more the merrier!
Pour the egg mixture in the bowl with the mashed bananas, and add in the rest of the ingredients: 1 teaspoon of baking soda (to make the pancakes extra fluffy), 1-2 teaspoons of cinnamon powder for flavor, a dash or ⅛ teaspoon of salt to balance out the sweetness and elevate the flavors, and 1-1 ½ teaspoon of vanilla essence. Mix thoroughly.
Heat up your griddle pan on the stove if you have one. A regular pan will work just fine as well. Set the heat to medium or low heat.
Once the pan is hot, add a small piece of butter and let it slide all over the pan.
Scoop up about a ladle of our banana egg pancake batter and fry on the griddle. After about 1-2 minutes, flip the pancakes and cook the other side.
And tada! The easiest, healthiest, and fluffiest pancakes for breakfast. Feel free to add some whipped cream on top, or you can choose to go for nut butter or some fruits instead. You can serve this to your family for a couple of days - just get creative on the topping. Serve on your breakfast table while they’re hot!
