An Easy Backup Meal For Your Busiest Days: Taco Soup For This Week’s Meal Monday!

For this week’s Meal Monday we bring you Taco Soup - a very easy backup meal to serve to our families on those days when we are stressed out or in a rush. Tacos are a Mexican staple but we don't have to serve it with tortillas or chips all the time - we can also make other 'taco-flavored' meals such as soup. Diana made this recipe while holding her baby Ivy to show you it can be easily done while doing other things around the household. The ingredients are always available in groceries and you might just have all of them already in your pantry. Let’s start!
You’ll need:
A can of whole corn kernels
A can of black beans
A can of pinto beans
A can of diced tomatoes
A pack of taco seasoning
Canned chicken
3 tablespoons of ranch seasoning
3 cups of water
Cornbread (optional)
Place three cups of water in a saucepan and add in the canned chicken with the brine. Make sure to break up the chicken pieces with a fork before putting it in the pan. Bring to a boil.
Place sliced cornbread pieces in your oven and toast them. This is optional, but this is a great supplement to the taco soup. You may serve it over rice as well or whichever kind of bread you prefer.
Add in a can of diced tomatoes, pinto beans, black beans, and corn. Stir everything together while boiling.
Next up - seasoning! Just open the packet of taco seasoning and pour it into the soup we’re making. A packet costs about fifty cents so aside from being easy, this recipe is super affordable too.
Lastly, let’s add in about three tablespoons of ranch seasoning. Keep stirring until it all comes together into a warm soup.
Serve in a bowl with your choice of bread or rice.
